檢定安格斯牛肉即Certified Angus Beef,簡稱CAB,是美國安格斯牛肉協會於1978年成立至今的檢定安格斯牛肉專案計畫,用來行銷並確保具有黑色血統特徵肉牛(安格斯牛)所產出的高水準牛肉。牛肉品質自然穩定且超乎一般水準者,才有資格被蓋上「檢定安格斯牛肉(CAB) 」的權威標誌。

安格斯西冷配芝士焗蘑菇食譜:
材料:
- 2塊Excel CAB安格斯西冷 ~200g
- 1/2茶匙鹽
- 1/2茶匙黑胡椒粉
- 200克蘑菇
- 2湯匙牛油
- 2瓣大蒜頭(切碎)
- 100g馬蘇里拉芝士(切成小塊)
- 新鮮香草(切碎,裝飾用)
步驟:
- 將安格斯西冷切片,約每片2.5cm厚,用鹽和黑胡椒粉均勻地塗抹在牛扒上,醃製15分鐘,待牛扒入味。
- 將蘑菇洗淨,切成小塊備用。
- 於平底鍋加熱牛油,加入切碎的蒜頭炒香。

加入切好的蘑菇,炒約3-4分鐘,直到蘑菇變軟和熟透。加入一點鹽和黑胡椒粉調味。
- 預熱焗爐至攝氏200度。
- 將Excel CAB安格斯西冷和煮熟的蘑菇放在盤中,撒上切成小塊的馬蘇里拉芝士。
- 放入預熱好的焗爐中,焗5-6分鐘,或直到芝士完全融化並變得金黃色。

Cooking instructions:
Excel CAB Angus beef sirloin with cheesy baked mushrooms: Slice the Excel CAB Angus beef sirloin into thick pieces and marinate with salt and black pepper. Wash and cut the mushrooms into small pieces, then sauté them with butter and garlic until fully cooked. Place the Excel CAB Angus beef sirloin and cooked mushrooms in a baking dish, add diced mozzarella cheese on top, and bake in the oven for 5-6 minutes until the cheese is melted.
