鵝肝是法國著名料理。歐洲人將鵝肝、魚子醬和松露並列「世界三大珍饈」。

匈牙利鵝肝鮮嫩味美,細緻綿密,豐美多汁,油脂豐富,香味獨特,滑膩且入口鬆化,最常見鵝肝的煮法是煎、烤、滷。

匈牙利鵝肝建議吃法:沾上少許粟粉後再以小火慢慢煎封鵝肝表面,能鎖緊鵝肝的肉汁,表面焦黃濃香即可,再配以松露提味的深色波特酒醬汁。另一種吃法是待鵝肝煮熟後冷卻,切片成冷盤。進食時再配上甜酒或紅酒,更加滋味。煎後的鵝肝油可用來炒意粉或蔬菜,令整碟菜式充滿鵝肝油的香味。
